The old gristmill in Cambridge, Ontario has been operating, almost continuously, since 1807 when John Erb and his wife settled on his Speed River lands at the confluence of the Grand and Speed Rivers. Around this mill grew the Town of Preston, which would eventually amalgamate with the neighboring towns of Galt and Hespeler to create the new City of Cambridge.
In 2011, Cambridge Mill opened a new restaurant concept that took the rich agricultural and industrial history of the region and, with the help of Executive Chef Brad Lomato, created a rustic fine dining experience.
Cambridge Mills’ attention to detail, and commitment to the history of their region, is reflected in their ‘Earth to Table’ philosophy. Every item on the menu is grown responsibly and locally, meaning they change to reflect what is in season and are always unique. This sustainable use of local business and agriculture is not only a cornerstone of this restaurant concept, but is also engrained in the region of Waterloo itself.
